Why are there multiple developers?
It can be used to improve photo quality, unlock new features, fix bugs on their phones, support new ones, etc. for developers to share their tools. Users can then test and provide feedback. Some of these versions work, some do not. Some are better than others, so it's important to be part of a community where everyone shares their feedback.
What does Gcam bring to your smartphone?

It has been developed to create clearer photos that offer a better balance between the light and dark areas of the image.

The benefits are attributed to collecting more light, reducing noise and preventing motion blur with improved dynamic range.
Portrait Mode
The effect where the background is blurred and the foreground highlighted, making the image look like it was shot with a professional camera.

About this port:
This is a modified Google Camera app, also known as Pixel Camera. Google Camera is the stock camera app shipped on Nexus and Pixel phones from Google. Google's HDR+ technology improves picture quality specially on low and mid end phones.
Features include HDR+, portrait mode, motion photos, panorama, lens blur, 60fps video, slow motion, and more.
Because Google Camera wasn't created to work on all phones, it's all a bit messy (read: why so many devs/ports), but a few developers try to make it compatible with a huge number of phones.
Don't blame Google if something doesn't work, after all this is not the official app. Keep in mind that GCam isn't open source, so it's hard or even impossible to add new features.

How To Install and Use GCam
How to use:
Download the apk file (use one of the suggested versions or pick one of the developers);
Install GCam by opening the APK file (how to install an APK file);
Set up the app using the "suggested settings", "configs", or settings provided on the "changelog" link (some apks don't need any configuration);
Restart the app and enjoy!

There's no "universal" apk or configuration that works on all phones. Read the page why so many versions and devs to understand why this happens and how you can find the best version and settings for your phone.
Compatibility and requirements:
Only works on phones with the camera2 API enabled;
Mod compatible with modern Snapdragon SoCs. Some versions work on some Exynos, Kirin, and Mediatek phones, but usually with limitations.
ARM64, only very old versions (GCam 4) support 32 bit;
Recent apks may not work on older Android versions;
Requires GApps or a replacement like microG ;
Android only;
